Delicious Jelly Cakes



My first ever attempt at making what the Australians call Jelly cakes, but for us kiwis, they are raspberry lamingtons. The only difference being that you fill them with cream before you roll them in the jelly and coconut. They are delicious. The only thing I would do differently next time is make them slightly smaller and not cook them for as long.
Perfect afternoon treat with a lovely book and steaming cup of tea. x x
